Frequently asked questions
All about honey
Why has my honey gone solid or grainy?
This is called crystallisation, and it is completely natural. Honey is packed with natural sugars that slowly form crystals over time, especially in cooler weather. Your honey has not gone off and it is perfectly safe to eat. Some varieties crystallise faster than others.
How do I make crystallised honey runny again?
Take the lid off and stand the jar in a saucepan of warm water, stirring now and then until it softens. Keep it gentle, below 45°C, so the honey keeps its flavour. Avoid boiling water, direct heat or the microwave. If you enjoy it spreadable, simply leave it as it is.
What is the best way to store honey?
Keep the lid on tight and store your jar in the pantry or a cupboard, away from direct sunlight. There is no need to refrigerate it, as cooler temperatures speed up crystallisation.
What is creamed honey?
Creamed honey is real honey that has been crystallised in a controlled way, giving it a smooth, thick and spreadable texture. It is lovely on toast.
Why does each honey taste different?
Flavour, colour and aroma all come from the flowers the bees visit. That is why our Stringybark is dark and rich with chocolate and espresso notes, and every other pot in our range has its own character.
Can I give honey to my baby?
No. Honey should not be given to babies under 12 months old, including in foods that contain it, because of the risk of infant botulism.
